In 2016, Elena Vargas was a home baker with a dream and a sourdough starter that had been in her family for three generations. Every Saturday, she'd load her car with loaves and drive to the Portland Farmers Market, where lines formed before she even set up her tent.
The demand was undeniable. Within a year, Elena signed a lease on a small space in the Pearl District, gutted it with her own hands, and built the oven that would become the heart of The Golden Hearth.
That original starter — now 10 years old — still leavens every loaf we bake. Some things shouldn't change.
The principles behind every loaf
Stone-milled flour, real butter, seasonal fruit. No shortcuts, no fillers, no artificial anything.
We donate unsold bread to local shelters and partner with Oregon farms to keep our dollars local.
Our sourdough ferments for 48 hours. Our croissants are folded over three days. Patience is the secret ingredient.
Compostable packaging, food waste composting, and a goal to be zero-waste by 2027.
The people who make the magic happen before dawn
Founder & Head Baker
Third-generation baker, keeper of the starter, and the one who still shapes every sourdough loaf by hand. Elena's philosophy: if you wouldn't serve it to your family, don't serve it at all.
Pastry Chef
Trained in Paris, fell in love with Portland. Marcus brings French technique and Pacific Northwest ingredients together in pastries that are both precise and soulful.
Operations Manager
The person who makes sure everything runs smoothly — from supply chain to catering orders to the morning chaos. Priya is the reason you get your croissant hot and on time.
